Meet Foxglove, a double-cream, washed-rind, always luscious, sometimes stinky, & savory cheese.  We wash this cheese with a mixture of special ripening cultures – essentially, a cocktail of beer (Hubbard & Cravens Porter Beer made by Thr3e Wise Men Brewing, Indianapolis, IN), yeast, bacteria & salt water.  It’s this combination that creates a reddish colored rind, a pungent aroma, and is responsible for ripening this cheese from the outside to the center.  As it ages, the rind may develop other colors (grey & white), all part of its development.  The rind has a strong boozy/yeasty flavor so eat it as you like, it’s a matter of personal preference.
We think it’s simply FUNK-A-LI-COUS!

This cheese pairs well with floral, honeyed, or fruity beverages like Riesling & Port Wines and Cider Beers or Belgian Ales.
The lot number is the date it was born – this cheese is best between 4-8 weeks of age.
